UKRAINIAN SOUR CHERRIES VARENYKY RECIPE
Varenyky are traditional Ukrainian dumplings. There are many different types of varenyky; potato varenyky, cheese varenyky, cherry varenyky and more. Here we share with you the recipe of Varenyky with sour cherries 30-40 persons , developed by Evelina Melnikova. Supporting Ukrainian cousine means #standwithukraine.
Ingredients:
For the filling:
* 300 g frozen sour cherries
* 40 g corn starch
* 70 g sugar
Step 1: Marinate the frozen cherries with sugar and starch. Allow them to defrost and drain off any excess liquid. Remember to keep the liquid separate from the cherries.
Step 2: In a saucepan, heat the cherry juice along with the starch and sugar. Stir the mixture until it thickens into a smooth, velvety texture.
Step 3: Once the mixture has thickened, add the cherries back in. Allow the filling to simmer for an additional 5 minutes, allowing the flavors to meld together beautifully. Set the mixture aside to cool.
For the dough:
* 1.5 cups of flour
* 1 egg yolk
* 0.5 cup of hot water
* 2 tbsp sunflower oil
* 1/2 tsp salt
Step 4: Sift the flour into a mixing bowl. Create a well in the center and add the egg yolk, hot water, sunflower oil, and salt. Gradually incorporate the flour into the wet ingredients, mixing until a soft, pliable dough forms.
Step 5: On a lightly floured surface, roll out the dough into a thin sheet, approximately 2-3 mm thick. Using a round cookie cutter or a glass, cut out circles from the dough.
Step 6: Place a spoonful of the prepared sour cherry filling in the center of each dough circle. Be careful not to overfill.
Step 7: Fold the dough circle in half, creating a semi-circle shape. Gently press the edges together to seal the varenyky, ensuring no filling escapes.
Step 8: Bring a large pot of salted water to a boil. Carefully drop in the varenyky, cooking them in batches to avoid overcrowding. Cook for about 3-4 minutes or until the dumplings float to the surface.
Step 9: Using a slotted spoon, gently remove the cooked varenyky from the pot and place them on a serving platter.
Step 10: Serve the Sour Cherry Varenyky warm drizzled with melted butter. They are best enjoyed fresh.
